Today we’re talking about the best make-ahead desserts. The arrival of fall means less time for baking. Lazy summer days are behind us, and everyone is back to school and routines and schedules. But we still need sweets!

That’s why it’s key to have a solid set of easy make-ahead dessert recipes in your back pocket. When you find yourself with extra time, whip up one of these recipes and have dessert ready to go whenever you want it in the coming week.

We’ve often found ourselves needing a gift to bring to a dinner party or to send as a thank you. Instead of searching around for a card or scented candle, we turn to shortbread. This buttery cookie is slightly more sophisticated than a cookie or a bar.

Indulgent enough to count as a special occasion, shortbread is simple to make and tough to mess up (yes, we said it, foolproof!).

Planning a dinner party is a lot of work. Dessert often falls last on the list and is easily left to the last moment.

Our suggestion is to keep a few loaves of Lemon-Glazed Pound Cake in the freezer so that you can toast a few slices. This pound cake is exceptionally moist, owing to a citrus glaze poured on top while still warm, so it only gets better with time (if you can make it last that long).

6. For an afternoon pick-me-up: Gluten-free lemon squares

Sometimes you just need a bite of dessert in the mid-afternoon slump of the day. We always try to have something homemade sitting around, ready to tackle any blood sugar drop that hits. Our Gluten-Free Lemon Squares are nicely tart and not overly sweet: the ideal (and tangy!) way to brighten up any afternoon.

    Once the weather cools down I will be baking some/most/?all of these, I can confirm that having the lemon pound cake in the freezer is like money in the bank.

    I like making whoopie pies ahead of time. The componants store great separately in the fridge or freezer, then you can take out what you need, combine the cakes and the filling, and you have a quick dessert that looks like it took a bit.

    I also love having chocolate chip cookies on hand (the brown butter ones from you have become my speciality). 🙂

    I always have some kind of cookies ready to go in the freezer. If I’m well prepared I’ll have some scones on hand.

    I freeze a lot of our baked goods ahead especially when having a party. I always have a couple of kinds of baked cookies frozen. I package them in little freezer bags one dozen each. That way I can pull out as many as I need very easily. I also usually have a pound cake baked and in the freezer – double wrapped in plastic wrap and then sealed in a 2 gallon zip bag. We just had a party and I made the little mini cheesecakes from the KAF recipe. I put them in a plastic container, spaced out so they did not touch, froze them for a couple of weeks, and defrosted them in the frig overnight in the container. They were perfect. The other thing I do is make little sweet pastry tart shells, bake them, and then freeze. All I do is let them defrost a few minutes on the counter and then fill with a variety of fillings. Parties are so much easier if the desserts are done well ahead of time.

    My make ahead recipes are Zucchini bread, sweet potato pie,apple pies & baked macaroni & cheese! I love fall cooking!
